Chicken Pot Pie Soup
Ingredients:
1 rotisserie chicken breast chopped
1-2 tbsp butter or butter substitute
½ sweet lg onion
2 carrots or ½ bag baby carrots chopped
1-2 stalks of celery chopped
2 medium potatoes chopped
1-2 cups chopped mushrooms
½-1 cup peas
1 cup chopped green beans
6 cups broth/stock (chicken) or 6 cups water and 6 tsp bouillon
sprig of fresh thyme or 1 tsp dry thyme
garlic powder, garlic salt or dehydrated garlic- approx. 2 tsp
2 tbsp arrowroot starch or cornstarch
Directions:
Saute onion, carrots and celery in tbsp of butter or oil until tender
Add potatoes
Add broth or water and bouillon and bring to boil. Turn heat to medium/simmer
Add sprig of thyme to pot
Add spices
Add the mushrooms, green beans and peas
Add the chicken
Cook about 10-20 min
Pull out thyme sprigs when they are limp and remove them from pot (can pull the leaves off the sprig with your fingers if desired)
Stir 1 tsp water into arrowroot starch and mix til blended. Add to soup stirring constantly until desired thickness is achieved. Soup will thicken over time so add slowly
Enjoy with toasted bread or crackers
