Inspiration Soup with Jakki Gioia 11- 21-18 Chicken Pot Pie Soup

Chicken Pot Pie Soup

Ingredients:

1 rotisserie chicken breast chopped

1-2 tbsp butter or butter substitute

½ sweet lg onion

2 carrots or ½ bag baby carrots chopped

1-2 stalks of celery chopped

2 medium potatoes chopped

1-2 cups chopped mushrooms

½-1 cup peas

1 cup chopped green beans

6 cups broth/stock (chicken) or 6 cups water and 6 tsp bouillon

sprig of fresh thyme or 1 tsp dry thyme

garlic powder, garlic salt or dehydrated garlic- approx. 2 tsp

2 tbsp arrowroot starch or cornstarch

Directions:

  • Saute onion, carrots and celery in tbsp of butter or oil until tender

  • Add potatoes

  • Add broth or water and bouillon and bring to boil. Turn heat to medium/simmer

  • Add sprig of thyme to pot

  • Add spices

  • Add the mushrooms, green beans and peas

  • Add the chicken

  • Cook about 10-20 min

  • Pull out thyme sprigs when they are limp and remove them from pot (can pull the leaves off the sprig with your fingers if desired)

  • Stir 1 tsp water into arrowroot starch and mix til blended. Add to soup stirring constantly until desired thickness is achieved. Soup will thicken over time so add slowly

  • Enjoy with toasted bread or crackers
